Crust: Combine all ingredients. Press into bottom and 1 1/2 inches up sides of a 10 inch springform pan. Chill.
Topping: Combine all ingredients, except caramel ice cream topping, until crumbly. Set aside.
Filling: Beat cream cheese, brown sugar and sour cream for 2 minutes. Add eggs, one at a time, beating well on low speed. Add spices and vanilla. Pour into crust. Spread apples over filling. Mix topping ingredients and sprinkle topping on top.
Bake at 325 degrees for 65-75 minutes.
Cool completely in pan on wire rack. Chill overnight. Serve with 1 tablespoon caramel ice cream topping over each slice.
