Apple Crisp Cheesecake

  1. Crust: Combine all ingredients. Press into bottom and 1 1/2 inches up sides of a 10 inch springform pan. Chill.
  2. Topping: Combine all ingredients, except caramel ice cream topping, until crumbly. Set aside.
  3. Filling: Beat cream cheese, brown sugar and sour cream for 2 minutes. Add eggs, one at a time, beating well on low speed. Add spices and vanilla. Pour into crust. Spread apples over filling. Mix topping ingredients and sprinkle topping on top.
  4. Bake at 325 degrees for 65-75 minutes.
  5. Cool completely in pan on wire rack. Chill overnight. Serve with 1 tablespoon caramel ice cream topping over each slice.

I enjoyed this cheesecake, but I prefer using only flour, instead of oats and flour, in my topping. I also melt the butter in my topping.
