  1. Peel carrots and cut into 1/4" thick slices.
  2. Line 13x9" glass casserole dish with carrots then top with thinly sliced white onions. Drizzle with olive oil, then cook on high in microwave for 8-10 minutes or until carrots are just soft enough to penetrate with knife.
  3. Layer baby spinach on top of carrots and onions mixture, then top with fennel seeds, rosemary, thyme, and green beans. Drizzle with olive oil (use more if desired).
  4. Cook on high in microwave for 8 minutes or until green beans are al dente, then mix and serve.
