  1. Beat together eggs, flour, milk and salt. Let rest 30 minutes.
  2. Spoon 1 tablespoon butter into each of 6 individual souffle dishes or custard cups. I also use cupcake tins.
  3. Heat the butter in a 450 degree oven until almost brown.
  4. Beat pudding mixture again and turn it into the dishes or cups.
  5. Bake at 450 degrees for 10 to 18 minutes (or longer for larger pans). The puddings should be puffy and golden. Do not open door until puddings have risen and are golden brown.
  6. Serve at once.
