Bacon Mac and Cheese


"Rich baked Mac and Cheese with enough bacon to please meat eaters! I use an Italian Cheese blend, but also add additional Parmesan and Asiago for extra punch. I tend not to measure and go heavy on the pepper."

  1. Pre-heat oven to 350 degrees.
  2. Boil pasta until tender, drain and put in a buttered casserole dish. Top with cooked bacon.
  3. Melt butter and cook garlic for about 1 min. Add flour to make a roux. Add milk, salt and pepper and bring to a light bubble.
  4. Remove from heat and add all but 1/2 cup of the Mozzarella and 1/2 cup of the Italian Blend.
  5. Top the casserole with the remaining cheese and bake for 30-35 minutes until the cheese bubbles and browns.
