Breadfast Casserole, from Johnsonville sausage people

"I found this recipe in a little brochure from the Johnsonville sausage poeple. It is a meat such as sausage, ham or bacon, eggs, onions, bell peppers and cheese poured over cut up English muffins. Sort of reminds me of a Denver omelet in a baking dish."

  1. Cut the meat into bite size pieces. Saute until meat is cooked then remove to dish to drain. Put onions, peppers, mushrooms into meat drippings and saute until hot and onion is getting clear. Add the browned meat to vegetable mixture and continue cooking until hot then remove from heat and sit aside.
  2. Tear English muffins into bite size pieces and spread out in an even layer in a 9 x 13 baking dish and sprinkle with the melted butter.
  3. Distribute the sauteed vegetables, meat and cheeses evenly over the English muffin pieces.
  4. Combine eggs, milk, salt and pepper. Whisk until well blended. Pour egg mixture over the muffin, meat and vegetable layer.
  5. Let the mixture rest for 30 minutes and then bake 350*F for 45 to 50 minutes or until dinner knife inserted in center comes out clean. Let the casserole stand for 5 minutes.
