"Here's a great easy and fast verion of an old favorite....chicken and rice!"

  1. Heat the olive oil in a skillet, add onions and garlic, cook until onions are tender.
  2. Add chicken and cook until no longer pink.
  3. In a 9x13 dish add rice (with season packets), sour cream, tomatoes, chicken soup, and cooked chicken.
  4. Mix all the ingredients adding water if needed (ingredients should have a slightly soupy appearance).
  5. Cover with tin foil and cook for 35 - 40 mins at 375.
  6. Turn off oven, add cheese, place back in oven (uncovered) until cheese is melted.
  7. Be careful not to over cook. since uncle ben's is converted rice, it tends to absorb liquids slowly. if the dish still looks too wet after cooking, allow it to set covered for a few minutes. Enjoy!
