Vegan Radish Top Soup

"I didn't want those beautiful greens to go to waste so I cut 'em up and turned 'em into soup. This soup comes out very green and would be presented well with red radish pieces in the center and a dollop of Vegan sour creme. Don't let the Vegan scare you, this is a delicious recipe no matter what your preference."

  1. Heat oil in 3 qt or larger pot, add onion, garlic, jalapeño, and garlic salt.
  2. Saute until onions are soft, then add potatoes. Allow potatoes to brown slightly, only stirring occasionally. Add broth and bring to a boil.
  3. Once boiling, add greens slowly, one handful at a time, allowing each to wilt into the liquid before adding the next.
  4. boil for about 10 minutes or until greens are fully cooked, stirring occasionally.
  5. Add cilantro and cook for about 2 minutes more. Remove from heat and let cool slightly.
  6. Blend all ingredients, you may need to do this in batches, DO NOT overfill the blender. Return to low heat and serve at desired temperature.
  7. Add garnishes just before serving, this would look beautiful with red radish slices and a dollop of sour creme.
