  1. Preheat oven to 350. Place 8 or 9 in cast iron skillet in oven to heat.
  2. In a medium bowl, mix flour, sugars, spices and salt.
  3. Add chopped apples and pecans and toss to coat.
  4. Add butter, extract and beaten eggs, stir to combine.
  5. Place reserved butter into hot skillet, swirl around pan to coat.
  6. When butter in pan is melted, add batter and bake 40 minutes.
