  1. Combine all ingredients in a blender. Cover and blend until smooth. More or less orange juice may be added to achieve desired consistency.

I doubled this recipe. I added a half teaspoon of coconut extract to the smoothie. That was the only change I made. The kids and I loved this smoothie. The kids drank theirs, then asked for mine.

If you don't like the texture of the real coconut, try adding 1/2 tsp. coconut extract.

The smoothie was very good and I definitely will be making again. Instead of plain vanilla yogurt, I added coconut flavored yogurt which I think helped a lot.
