Chocolate Chip Pumpkin Muffins

"I wanted to make pumpkin muffins with my daughter, but my husband accidentally picked up pumpkin pie filling instead of pure pumpkin, so I made up this recipe. I added the mini chocolate chips and extra spices since cinnamon and chocolate are two of my daughter's favorite flavors."

  1. Heat oven to 350 degrees.
  2. Line a muffin pan with paper liners (or spray with non-stick spray).
  3. In a large bowl, combine pumpkin pie filling, melted butter, brown sugar, eggs, and vanilla extract.
  4. In a separate bowl, combine flour, chocolate chips, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
  5. Slowly stir the flour mixture into pumpkin mixture.
  6. Pour into prepared muffin cups, filling 2/3 of the way.
  7. Bake 20 - 25 minutes.
  8. Cool and enjoy.
