  1. Preheat oven to 375 degrees and spray a 9x13 inch baking dish with cooking spray (Pam).
  2. Add turkey, beans, pumpkin, and taco seasoning in a bowl and mix well.
  3. Fill tortillas and place in baking dish.
  4. Put tomato sauce, chipotle peppers and chicken buillion in a blender and blend until smooth.
  5. Pour sauce over enchiladas and cover with cheese.
  6. Bake for 35-45 minutes or until cheese is melted and the sauce is bubbly.
  7. Serve with sour cream if desired.
