Cheesy Sweet Potato Au Gratin

"This is a delicious dish for the fall. We use very few ingredients, so it's easy (except for slicing the sweet potatoes) and convenient. It makes you feel warm and comfortable. The smell of it when returning home from a hard day of work makes the tough day and its stress go away. My gram from Louisianna used to make this when we were growing up. I don't have the exact recipe, as she cooks by "feel" and not by use of measuring. The measurements listed are what I use. Hope you like it."

  1. Spray your bake dish with the cooking spray.
  2. Place your sweet potato slices in a large bowl and fill with cold water.
  3. In a medium bowl, add garlic and ginger to your cream with a whisk until well-mixed.
  4. Drain sweet potatoes and dry with cloth or paper towel.
  5. Layer potato slices, cheese and a light drizzline of cream.
  6. Repeat this until you fill the pan.
  7. Top the dish with the cheese and moisten it with the remainder of the cream.
  8. Cover dish with foil and place in 350 degree over for one hour.
  9. In the last 20 minutes of cooking, remove the foil so that the top can brown.
  10. Remove from oven and let sit, uncovered for 5 minutes.
  11. Serve nice and hot.
