  1. Grease and preheat a waffle iron.
  2. Combine buttermilk and oats in a bowl or measuring cup and let stand for 15 minutes.
  3. In a separate bowl, combine all dry ingredients.
  4. Combine oats and buttermilk with eggs, applesauce and vanilla.
  5. Slowly add wet ingredients to dry ingredients, stirring just until moistened. Fold in chocolate chips.
  6. Pour mixture onto heated waffle iron (about 1/2 cup batter per waffle) and cook to desired doneness (about 5 minutes).
  7. Makes 6 servings of 2 waffles each.
  8. If you do not have buttermilk on hand, you can combine 2TBS white vinegar with 2 cups of milk and let stand for 5 minutes. I use a cocoa combination of 1 TBS dark chocolate cocoa and 1 TBS regular cocoa. I also use a combination of half dark chocolate chips and half semi sweet chocolate chips.
