  1. Chicken:
  2. Preheat oven to 375*
  3. Line 2 large sheet pans with foil and spray liberally with non-stick pan spray
  4. Cut chicken wings into three sections - discard tips
  5. Rinse chicken and thoroughly dry - Place chicken in large mixing bowl
  6. Add oil and spices and toss until chicken is evenly coated
  7. Spread chicken out evenly between two pans - do not crowd chicken
  8. Bake until golden and crispy - approx 35-40 minutes
  9. Remove from oven and let stand 10 minutes
  10. Transfer to large mixing bowl
  11. Sauce: (can be done while wings are cooking)
  12. In 2 quart saucepan; melt butter
  13. Whisk in remaining ingredients
  14. Bring sauce to a boil; reduce heat and simmer 15-20 minutes
  15. Pour sauce in with cooked wings
  16. Toss until well coated
  17. Arrange wings on service platter lined with some fresh greens
  18. Serve with fresh celery sticks and your favorite bleu cheese or ranch dressing
