Tangerine Sweet Potato Casserole- Great for Thanksgiving dinner

"Not the ususal "sweet marshmellow" sweet potato dish. Can be prepared 1-2 days ahead and baked when ready to serve. A favorite at our Thanksgiving dinners"

  1. Preheat oven 375 degree.
  2. Whip sweet potatoes w/ 3 tbls butter, 6 tbls brown sugar, 3 tbls rum and 3/4 tsp salt.
  3. Fold in tangelo halves (2 tangelos) into potato mixture.
  4. Turn into a greased 2 qt casserole.
  5. Arrange the remaining sections of tangelos on top of sweet potatoes.
  6. Combine remaining butter (3tbl), sugar (3tbl) and chopped pecans. Sprinkle evenly over the top of the casserole.
  7. Refrigerate until day of dinner.
  8. Bake for 30 minutes.
