  1. Place squash in water in glass baking pan, cut side down
  2. Bake at 375F for 30 minutes or in microwave 8-10 minutes
  3. Scrape squash meat into blender, add water from baking pan to fill up to 2" of blender; place lid on blender (cover with dishtowel to prevent splash) pulse 2-3 times
  4. Remove plug from lid, blend on cream setting, adding milk slowly until smooth and desired consistency. Soup should be thinner than a puree but creamy.
  5. Add nutmeg, ginger, and salt and pepper; blend on pulse 2-3 more times.
  6. Serve with a sprinkle of curry powder on top.
  7. Makes 2 large or 4 small servings.
