  1. Pre heat oven to 325 degrees
  2. Beat butter and sugar.
  3. Add one egg and beat to combine. The second egg will be saved until the end of the recipe. Set aside
  4. in a second bowl, combine the baking powder, cocoa powder and 2 1/2 cups of flour.
  5. Stir the dry mixture into the butter mixture.
  6. Divide dough into 6 parts.
  7. Roll out each section to 1" wide by however long your baking sheet is, dusting the board with the remaining flour as needed.
  8. Place the long strips on baking sheet. Do not cut.
  9. Beat one egg and brush the tops of the cookie strips.
  10. Sprinkle with chopped almonds and pearl sugar, if desired.
  11. Bake for approximately 20 minutes.
  12. Cool on cookie sheet slightly.
  13. Cut cookie strips on a slight angle and remove to wire racks to cool completely.
