  1. Preheat oven to 350
  2. Brown butter over medium heat. I mean really get it brown. The butter will get all foamy: don't be alarmed. Keep stirring occasionally.. don't want it to burn
  3. Remove from heat.
  4. Stir in flour, sugar, ammonium carbonate and vanilla and mix until well combined.
  5. Let mixture cool until easy to handle, but don't refrigerate.
  6. Roll cookies into balls and place on ungreased cookie sheet.
  7. Press almonds into the tops of the cookies. slightly flattening the cookie
  8. Bake 12-15 minutes. Let these cool on the sheet for a few minutes then transfer to wire racks to cool completely
