For Salsa: combine the onion, tomato, parsley, olive oil and lime juice in a medium bowl. Add salt and pepper to taste.
Preheat the oven to 350 Degrees F. Spread one layer of tortilla chips out on a pizza/cookie tray. Layer with spoonfuls of the salsa and sprinkle a layer of shredded cheese. Layer once more with chips, salsa and cheese.
Heat the nachos for 5 minutes or until the cheese is melted and bubbling.
Serve with your choice of sour cream, guacamole, and salsa on the side for dipping.
