  1. Over medium heat melt butter in heavy dutch oven.
  2. Add onion, celery and stew meat cooking until carmaelized.
  3. Add beef stock, water, bay leaf, marforam, oregano and soup bones.
  4. Simmer three hours skimming froth as froth developes.
  5. Add remaining ingredients and simmer for 1 hour.
  6. Remove soup bones and remove any meat on them returning meat to the broth.
  7. Season to taste with salt and pepper.
  8. Serve in large soup plates with hot french bread,
