  1. Rinse quinoa until water runs clear and drain.
  2. Melt butter in a saucepan over medium heat. Sauté onions for about 3 min.
  3. Add garlic and sauté another min.
  4. Add the quinoa, and toast until lightly browned, about 5 minutes.
  5. Stir in broth and bring to a boil. Reduce to a simmer, add thyme and pepper, cover, and cook for 15 minutes, or until quinoa is tender.
  6. Meanwhile, saute shrimp and mushrooms in a little butter or oil and garlic.
  7. Add shrimp, mushrooms and parsley to quinoa and heat through.
  8. Sprinkle with lemon juice, fluff with a fork, and serve.
