Original recipe yields 6 servings

  1. Cook the bacon until crisp. Remove and reserve bacon from pan, but leave in the drippings.
  2. Add onion, red pepper, about 2 tsp. salt and 1 tsp. pepper and saute until softened.
  3. Add the garlic and Old Bay seasoning and saute another 2 minutes.
  4. Add the chicken broth, potatoes and corn. Add a little more broth or water if necessary to cover the potatoes.
  5. Bring to a boil over medium heat until potatoes are softened.
  6. Add milk, bacon and butter and bring to just boiling.
  7. Add fish and parsley and heat for about 5 minutes until fish flakes
  8. *You can replace the milk with half and half or cream, and the fish with seafood if you want a richer chowder.
