Foiled Raspberries and Asian Pear

"This is an old secret weapon I use when a family grill night turns into a deck party. You can use practically any combination of fresh fruits and berries, frozen or even canned. Fresh grated ginger, mint leaves, a vanilla bean or citrus zest are also welcome additions. The foil and the charcoal cooling as they burn out will prevent it from burning and yet keep it warm until you are ready for dessert."

  1. Wrap all ingredients in double layer heavy duty aluminium foil.
  2. Place in charcoal grill when you remove the main course.
  3. Allow to cook for at least 40 minutes, but it will stay warm in the grill until you are ready for dessert.
  4. Spoon over vanilla ice cream.
