Combine honey, soy sauce, and red pepper in a small bowl and season with pepper. Heat grill to high. Brush chops on both sides with oil and season with salt and pepper. Set aside a few Tablespoons for brushing the cooked chops.
Grill the pork chops until lightly charred and crusty, 4-5 minutes. Turn the chops over and reduce heat to medium (or move to a cooler part of the grill). Continue to cook for about 3-4 minutes, brushing frequently with glaze, so that chops are just cooked through.
Meanwhile, brush onion slices with oil and season with salt and pepper. Grill slices until browned, about 3-4 minutes a side.
Remove chops and onions from heat. Place chops and onions side-by-side on 4 warmed plates. Brush chops with reserved glaze. Serve immediately.
