Combine bread crumbs, herbs, sundried tomatoes. Mix with chicken, egg, and lemon juice til just incorporated.
Form into 4 or 5 patties with cheese in the center. I did this by taking about 2/3 of the meat for a patty in one hand and making a dent in the center, place the cheese in, then take the remaining 1/3 and place it on top, then gently smooth into a round and flattish form.
Cook on the grill or in a pan, 5-6 minutes per side, til they reach an internal temperature of 165 degrees.
Serve with tzatziki or a roasted red pepper sauce.
