  1. Whisk the eggs in a large bowl, add milk, salt, scallions and onion powder.
  2. Mix well.
  3. Spray a 9x13 baking dish with nonstick cooking spray.
  4. Add 1/2 of the Canadian bacon, followed by English muffin cubes, distribute remaining Canadian bacon on top.
  5. Pour egg mixture evenly over the top.
  6. Cover with plastic wrap and refrigerate overnight.
  7. Preheat oven to 375°.
  8. While oven is heating, sprinkle cassarole with paprika.
  9. Cover with foil and bake for 45-55 minutes or until the eggs are set. Remove foil the last 15 minutes.
  10. Drizzle with the hollandaise sauce or serve on the side if desired.
