"I've been trying for a while now to reproduce the local Thai restaurant's peanut chicken recipe. This is it. Makes 1.625 cups.   1. Mix everything in a pot, bring to boil for 5 seconds. Stir well, then remove from heat and serve. Do not simmer - it will burn and get clumpy.
  2. Serve with 3-4 large chicken breasts, cubed, on top of some rice and broccoli.
  3. Garnish with some chopped peanuts and sliced green onions.
