  1. Preheat oven to 350 degrees and butter, oil or spray a baking sheet.
  2. Rinse pecans in a strainer and drain the excess water
  3. In a bowl, mix the damp pecans with the sugar and cinnamon or vanilla.
  4. Spread the nuts out on a baking sheet in a single layer.
  5. Bake for 12-16 minutes.
  6. Remove and let cool (about 1 hour) before using.
  7. NOTE: I have just baked them on a baking sheet, but you could also put wax paper for easier clean up.
