Southerner's Neighborly Onion PIe

"My southern neighbor made this for us when we first moved to the south, from Chicago. I fell in love with this dish on the first bite and decided then that I liked southern cooks! It's with her permission that I post her recipe."

  1. Mix cracker crumbs and melted butter together to form crust in the bottom of a pie plate (do not bake crust).
  2. Microwave onion rings for about 5 minutes (covered), until slightly cooked. Drain off liquid.
  3. Over medium heat, whisk butter and flour in saucepan.
  4. Add egg and milk and stir until thickened (don't add cheese), to the consistency of syrup.
  5. Remove from heat.
  6. Place onions on top of crust and pour white sauce over the onions, lifting onions with a fork to make sure sauce gets all the way through layers.
  7. Layer Swiss cheese slices (from 4-8 slices) on top of onions and sauce.
  8. Bake at 400 degrees for about 45 minutes.
