  1. In skillet add oil, saute thinly sliced carrots,onions & peppers till soft.
  2. Add mushrooms continue cooking till soft.
  3. Salt and pepper to taste.
  4. Add salsa and bread crumbs.
  5. remove from heat and add cottage cheese.
  6. fold 1 sheet of phyllo in half length wise.
  7. spoon filling on to center bottom of pastry.
  8. brush with butter while folding pasty in to pocket.
  9. brush butter down sides and at the end of the sheet.
  10. place on baking sheet and bake for 20-25min @ 350.
