  1. Preheat oven to 350 degrees
  2. In a blender or food processor, combine, tofu, sugar, vanilla, salt, vegetable oil and lemon juice.
  3. Blend until smooth
  4. Pour into pie crust
  5. Bake for 20-30 mintues or until slightly browned
  6. Remove from oven and cool.
  7. Refrigerate until chilled
  8. May top with fresh fruit if desired
  9. Note: For a more diabetic friendly version, omit sugar and add 4 Tbsp of honey or to taste.
