Fiesta Chicken, Shrimp & Sausage

"This is dish I created to take to a Church Pot Luck Dinner. My family does not like onions or peppers, but I suspect that they would make nice additions. I tried to save time with the dish by using pre-cooked wild rice, microwaveable brown/red/wild rice mix, and shrimp that was already peeled and deveined."

  1. In a large electric skillet, heat olive oil over medium heat.
  2. Add garlic and 1 teaspoon of onion powder; saute until garlic starts to brown.
  3. Add chicken and kielbasa; saute until chicken is white on the outside and sausage starts to brown.
  4. Add chicken stock, wine, and tomato sauce; stir to blend.
  5. Add remaining 1 tablespoon onion powder, oregano, chili powder, paprika, old bay, salt, and pepper; stir to blend all of the seasonings.
  6. Cover and simmer until chicken is just done.
  7. Add shrimp, stir to blend the shrimp into the sauce and other meat.
  8. Cover and simmer until shrimp is cooked.
  9. Add both rices, stir to mix well.
  10. Add peas and beans, stir well.
  11. Cover and simmer a few more minutes until entire mixture is hot. Serve immediately.
