  1. Preheat oven 190C. Line mini muffin tins with greased paper cups. Cream butter & sugar till light. Add eggs one a time. Sift flour & baking powder, add to eggs & butter mixture. Add the coconut, milk & vanilla, combine well. Spoon into paper cups & bake 15-20 minutes till golden. Take out of oven & cool on wire racks.
