  1. Salt and pepper pork chops. Heat 2tbs vegstable oil on med high and add pork chops. Cook 2 minuted per side. Take off heat and set aside.
  2. Add garlic to the pan and cook for 10 second (careful not to burn the garlic). Add the red wine vinager, soy sauce, ginger, all spice, brown sugar and the cubed plums to the pan.
  3. Cover and cook on low for 45 minutes. Puree or mash down with a potato masher. The sauce should be a little thicker than gravy.
  4. Add chops back to pan and cook an additional 10 minutes.
  5. Serve with rice and garnish with cilantro.
