  1. In food processor, puree roasted peppers, mayo, basil, and dash salt and pepper to taste until smooth; set aside and refrigerate.
  2. Heat 2 tbs. EVOO in skillet on medium heat
  3. Pat salmon dry on both sides and sprinkle with coarse salt and ground pepper to taste.
  4. Cook salmon in skillet approximately 4 minutes per side, depending on thickness of filets, until golden.
  5. Slice ciabatta open for sandwich, spread 2 tbs. pepper mayo on inside.
  6. Place Salmon, lettuce, tomato, and onion inside ciabatta, and serve!
