  1. 1. Heat olive oil in tall skillet, about 1/8 of an inch.
  2. 2. Combine flour, salt, cayenne pepper, and paprika.
  3. 3. Dredge a steak in flour mixture, dip in buttermilk, and then dredge back in flour mixture. Repeat with second steak.
  4. 4. Place the steaks in the hot oil and cook for 4 minutes. Flip and cook on the other side for another 4 minutes.
  5. 5. When steaks are fully cooked, remove from heat.
  6. 6. Keeping skillet over heat, whisk in flour 1 tablespoon at a time until a roux forms. (Note: Not that much oil is needed to create the roux. If needed, pour out extra oil until a thin layer left.)
  7. 7. After roux formed, slowly pour in cream, continuing to whisk.
  8. 8. Add pepper and let gravy cook for 2 minutes. Stirring constantly.
