  1. 1. Coat salmon fillet in pesto sauce, reserving about 2 tablespoons, and bake at 325 degrees for 20 minutes. Remove from oven and flake into chunks.
  2. 2. Bring pot of water to boil and cook pasta for recommended time.
  3. 3. Meanwhile, heat a pan coated in olive oil over medium low.
  4. 4. Add fresh spinach to heated pan and wilt. Remove from pan
  5. 5. Chop garlic and shallots and add to heated pan. Add red pepper flakes and pepper and more olive oil if needed. Saute for 5 minutes.
  6. 6. Drain canned artichokes and add to pan. Continue to saute for another 3 minutes
  7. 7. Add white wine and let simmer for 5-10 minutes to burn off alcohol.
  8. 8. Add remaining pesto sauce, spinach, salmon, cheese and cooked pasta to pan. Stir until combined
