"I got this recipe from a lady whose son I was cooking for while on his mission for our church. When I asked him what he meal he missed most from home, this was his choice and it has now become one of our favorites as well! I've also used chicken in place of the ground beef and it too is really good."

  1. Preheat oven to 375
  2. Brown ground beef in skillet.
  3. Add onion and saute
  4. Season with chili powder, salt and pepper
  5. Remove from heat
  6. Mix in 2 cups of cheese, reserving 1 cup to top with
  7. Place enough meat on the tortilla to cover half and roll up enchilada style placing seam side down in a 9x13 baking dish
  8. When done rolling, mix the sauce ingredients in separate bowl and spoon over the enchiladas then top with remaining cheese
  9. Bake in preheated oven for 20-25 minutes
