Add thyme and garlic at the end of cooking and continue to sauté on medium heat for 2 min. TIP: if you forgot to bring the cream cheese to room temperature you can add it to the pan with the onions at this point and melt so that it will mix in properly.
Cool bacon and onion mixture.
Mix in other remaining ingredients well, except for 1/2 of mozzarella cheese and bread and add bacon and onion/garlic mixture to cheese mix.
Top with remaining mozzarella cheese.
Put mixture in greased casserole dish.
Bake, uncovered 20- 25 min (until bubbly and slightly browned) at 375 F.
Serve hot with your choice of toasted pita slices, fresh crusty bread chunks, or warmed blue tortilla chips. You will want a lot of dippers (ie. if you choose bread you will use at least one loaf)
