Passover Apple Cake

"Unbelievable moist cake. Most Passover desserts are very dry but this cake is incredibly moist."

  1. Peel and core apples, slice into quarters.
  2. Beat egg whites until stiff.
  3. Set aside.
  4. In large bowl at medium speed beat egg yolks with oil and orange juice until creamy and thick (about 5 minutes).
  5. Add 1 cup sugar and mix well.
  6. Stir in matzo meal and salt.
  7. Fold in egg whites.
  8. Spread half of mixture in pan.
  9. Cover with apples.
  10. Mix remaining 3/4 cup sugar with cinnamon and sprinkle 1/2 cup of this onto apples.
  11. Top with remaining batter and sprinkle with remaining sugar and cinnamon.
  12. Cut into squares while still warm.
  13. Cool in pan.
