Mushroom, White Wine and Butter Pasta with Shrimp

"This is my version of an excellent meal I love at a local italian restaurant. They put their sauce over a chicken breast with pasta on the side, which is excellent as well. Hope you like it!"

  1. Cook pasta according to directions.
  2. In large saucepan, melt butter of medium heat.
  3. Add garlic and saute for 2-3 minutes.
  4. Stir in olive oil & 1/2 cup of white wine. Bring to a boil.
  5. Reduce heat and let simmer for 3-4 minutes to reduce wine.
  6. Stir in sliced mushrooms and cook until mushrooms soften, about 5 minutes.
  7. Add shrimp.
  8. Heat 1 tablespoon wine in microwave and stir in corn starch with a fork (forking corn starch into warm liquid removes lumps).
  9. Slowly pour wine/corn starch mixture into the sauce, while stirring.
  10. Add chopped bacon, scallions and lemon juice.
  11. Simmer until shrimp is opaque.
  12. Serve over cooked pasta.
