  1. Combine your sliced strawberries and rhubarb. Mix in the sugar, tapioca, and lemon juice.
  2. Let pie mixture sit for at least 15 minutes, stirring occasionally.
  3. Unroll pie crusts and place one in the bottom of a 9 inch pie pan. Pour prepared pie mixture into pan and form into a nice mound.
  4. Dot the mixture with butter and then apply top pie crust. Crimp the edges. Cut slits in the top for steam to release.
  5. Bake in preheated 400 degree oven. Place pie pan onto cookie sheet. Bake 40-55 minutes. The pie is done when it is bubbling and golden brown.
