  1. Heat oven to 350 degrees.
  2. Cut and Shred chicken into mixing bowl
  3. Add cream cheese, sour cream, corn, chili powder, cumin, 1 cup of the shredded cheese, and salsa.
  4. Mix until fully combined
  5. "taste check" and add more seasoning, salt, pepper, and onion powder to taste
  6. wrap sets of 4 tortillas in foil (should only need 2 sets), and place in oven for a few minutes to soften them up and make them easier to roll
  7. pour 1/2 of one can of enchilada sauce over bottom of 11 x 7 inch pan, and distribute so it lightly covers entire pan evenly
  8. spread 1/2 cup of cheese/chicken mixture into each tortilla (focused in center), roll, and place in pan
  9. repeat this with all tortillas
  10. spread remaining 1 1/2 cans of enchilada sauce over tortillas
  11. sprinkle remaining 2 cups of shredded cheese over enchilada sauce
  12. bake for 20-25 minutes
  13. Enjoy!
  14. Note: Enchiladas are substantial so don't underestimate the filling power of just one! They are also delicious with tortilla chips.
