  1. Rinse and sort through the lentils, then boil them in water for about 20 minutes or until tender.
  2. As lentils are cooking combine kidney, beans, corn and chopped parsley in a bowl.
  3. To make vinaigrette combine olive oil, balsamic vinegar, sugar, salt and pepper whisk together until combined.
  4. When lentils are cooked drain them over the sink and dump them into bowl with beans, corn and parsley.
  5. Add vinaigrette and mix gently, cover and put in the fridge until cooled.
