"This is my favorite chicken and wild rice soup. It is a basic recipe and you can customize it to your taste easily. I like the flavor from the wild rice seasoning."

  1. Heat oil in a large pot over med. heat.
  2. Add chicken pieces, two carrots and celery cut in half, and the whole peeled onion. Saute until chicken is browned. Season with salt and pepper.
  3. Add crushed garlic cloves for a minute or two, then cover the ingredients with water.
  4. Once boiling, turn heat down to simmer for 2-3 hours, adding water as necessary.
  5. Meanwhile, cook the rice according to package instructions and place in the fridge.
  6. Peel and chop remaining three carrots.
  7. Remove chicken from the pot to cool, and strain the broth. Discard veggies and shred the cooled chicken.
  8. Add the chicken and broth back into the pot, along with the chopped carrots and lemon juice.
  9. When carrots are almost finished cooking, add the rice and chopped parsley.
  10. Heat through for another 5 minutes or so, check for seasoning and serve.
