  1. Preheat oven to 350º.
  2. Spray muffin tin.
  3. Whisk eggs well.
  4. Put 2 Tablespoons parmesan shreds into bottom of each muffin well.
  5. Pour ¼ cup of eggs into each well.
  6. Top each with Canadian bacon.
  7. Butter each slice of whole grain bread and cut two rounds out of each slice using the top of a glass (2.5 inch diameter). Place a round (buttered side up) atop each breakfast basket.
  8. Bake for 12 minutes, or until eggs set and then turn oven to broil until bread is toasted.
  9. Pop out and serve. Great with fresh citrus!
