"I expanded the recipe my grandmother taught me for her mac and cheese while I lived in Europe. The addition of basil, garlic, onion and a few more cheeses make this tradtional comfort food a favorite of any that try it."

  1. Follow the package directions to cook the noodles (since the noodles are being heated twice, only boil for half the time to reach what the package calls "al dente").
  2. When the noodles are ready, drain and put into a large casserole dish or pan and add the butter, onion, garlic, basil and salt and pepper. Mix well.
  3. Pour the eggs and half of the milk and mix together.
  4. Add all of the monterey jack, italian cheeses and half of both cheddars and stir together.
  5. Pour in the remaining milk and spread the remaining cheese evenly over the top.
  6. Bake in a preheated 325° oven for 1 hr 15 min or until the cheese on top is golden brown.
