Summer Asian Salad with Honey Chicken and Mango

  1. Prepared all vegetables and fruit (mango, tomatoes, broccolini, snow peas, pak choy, avocado and capsicum) as directed above. Set aside.
  2. In a large pan or pot, add oil and heat for 1 min. Add 1 tbs of honey and add chicken. Cook the chicken until no more pink can be seen and it is fully cooked through. Also set aside, covered.
  3. Mix lemon juice, Kecap Manis and honey in small cup until well combined. This will be the dressing.
  4. Rinse the snow peas, broccolini and pak choy and lightly steam for about 3 min in the microwave or in boiling water. Removed and put in large salad bowl.
  5. Add remaining ingredients including vegetables and chicken to the bowl and coat with dressing. Serve with fresh mint.
