  1. Preheat oven to 450 degrees F (we will bake them later at 350 degrees F.)
  2. Beat on high brown sugar, butter and vanilla extract in a large mixing bowl (stand mixer is best.)
  3. Add eggs one at a time and beat very well after each addition.
  4. In a small bowl combine flour, salt and baking soda.
  5. Add flour mixture to large mixing bowl and beat on low until just combined - do NOT overmix the batter.
  6. Morsels should be mixed in by hand (or on very low), again as to not overmix the batter.
  7. Prepare cookie sheet with silicone baking mat or parchment paper. Do NOT grease cookie sheet.
  8. Use two spoons to drop batter onto prepared cookie sheet.
  9. Place cookie sheet in pre-heated oven and TURN TEMP down to 350 degrees F. Bake 8-10 mins, cookies should be light colored in the middle and golden at the edges when done.
  10. Cool for at least 5 minutes on baking sheets. Store in airtight container with small apple wedge to maintain softness.
