  1. rub chicken breasts with kosher salt, allspice, and pepper
  2. heat olive oil and add in chicken and shallots
  3. cover and cook over low heat, turning chicken once, until shallots are translucent and chicken appears outwardly cooked, approximately 7 minutes
  4. uncover and add white wine and chicken broth, stirring and scraping up browned bits from pot bottom
  5. recover and simmer over low heat until chicken juices run clear
  6. turn off heat
  7. add in lemon juice, lemon zest, butter, and adjust salt and pepper to taste
  8. prepare couscous for 4 according to package directions
  9. serve each breast with couscous and sauce ladled over
